I'm never sure when writing if words at the start of a sentence that start with an ʻokina should have the letter after the ʻokina capitalized. I have seen it done by some authors and not by others, but can't find a definitive rule? I notice for example in your Verbs 1 list you write ʻŌlelo (To speak, talk) but in Adjectives I see ʻono (tasty, delicious). And in Directions Hema but 'akau . Is it just a matter of choice at the end of the day? Mahalo nunui.

My apologies.. I just realized that your lists I was referring to are your original ones on aminoapp, which do have some words with the letter after the ʻokina capitalized, I just compared that with the lists on this site and you have changed them here to lower case.
I looking again at the Starter Vocab that you're referring to - all of those are lower-cased, none are capitalized.
I've actually only see the letter after the 'okina capitalized. I do it differently in my Duolingo Guides because I'm always told that the 'okina is itself a letter, so I try to treat it that way. Sometimes, like you noted, I will capitalize the following letter if, for some reason, it doesn't look right in the sentence/example I provide. That's just me though! I've never heard of anyone doing it the way I do, it's more of a self-imposed rule haha
